Cacao powder is the ground, largely de-fatted solids left after the roasted bean of the cacao tree (Theobroma cacao) is pressed to remove most of its fat. A key practical distinction is processing: natural, non-alkalized cocoa retains far more flavanols than "Dutch-processed" (alkalized) cocoa, in which alkalization mellows the flavor but destroys the majority of the flavanol content.
The best-supported mechanism is vascular. After cacao flavanols are consumed, epicatechin is absorbed and circulates as metabolites that raise endothelial nitric oxide, relaxing the vessel wall; this is measurable as improved flow-mediated dilation and a modest reduction in blood pressure. The evidence is honest about its limits. Cognitive and mood claims rest on smaller, shorter work; a controlled trial in young healthy adults reported only modest effects of cocoa flavanols on mood and cognition [4], so the "mental clarity" story is real but subtle and probably rides largely on improved cerebral blood flow rather than a strong direct nootropic action. Natural vs. Dutch-processed; does it matter?
A lot, if flavanols are the goal. Alkalizing (Dutch processing) mellows the flavor but destroys most of the flavanols. Reach for natural, non-alkalized cocoa or raw cacao; the label usually says which.
Can I just eat dark chocolate instead?
You get some of the same flavanols, but also sugar, fat, and calories, and the flavanol content is even less predictable. Plain natural cacao powder is the cleaner, more concentrated way to get the dose.
Should I worry about heavy metals?
