It forms white, water-soluble, moisture-absorbing crystals and is used as a food additive, a laboratory buffer, and a source of magnesium. As a dietary ingredient its role is simply to deliver magnesium, an essential mineral, in a soluble form.

Adiponectin is a protein hormone secreted mainly by fat cells that helps regulate blood sugar and the breakdown of fatty acids. Encoded by the ADIPOQ gene, it is one of the most abundant hormones in human blood and improves the body's sensitivity to insulin while exerting anti-inflammatory effects. Unusually for a fat-derived hormone, its levels tend to fall rather than rise with obesity, and low levels are linked to type 2 diabetes and metabolic disease.

Beyond its use as a fragrance and flavouring, it is a naturally occurring activator of AMP-activated protein kinase (AMPK), with preclinical evidence for enhanced energy expenditure and protection against diet-induced obesity, and it is also a recognised biopesticide and insect repellent registered with the US Environmental Protection Agency [1].
